Extreme Inspiration

In this day of all manner of "extreme" sports, reality shows, etc., I couldn't help but name this post what I did! Sunday night found us in Knoxville for a concert by the Annie Moses Band. There are just not enough words in our vocabulary to describe this family band. I had previously seen the family on DVD and thought them incredible. Seeing them live took that "wow" experience to staggering heights. I encourage all of you to check out their website. Be sure to check their touring schedule and catch them if they come near to you. The experience is truly EXTREME inspiration!!!

A Blessed Bundle of Broccoli

At the beginning of the week, a neighbor called to offer us some free broccoli. I cannot remember the circumstances of why he had such an abundance, but what a blessing it has been. We have had broccoli almost every night this week . . .

Monday - Steamed Broccoli with butter and garlic.

Tuesday - Chicken with Pasta & Broccoli in a Cheesy Cream Sauce.

Wednesday - Fresh Broccoli Salad with Craisins, Pumpkin Seeds, & Flax Seeds -- YUM!!

Thursday - Broccoli Quiche with Turkey Bacon & Cheese.

Tonight we had to repeat the Fresh Broccoli Salad.

We have ALL been enjoying the blessing!!! Thank you Lord! And neighbors!


FRESH BROCCOLI SALAD

6 cups fresh chopped broccoli
1/4 cup red onion, chopped
3/4 cup craisins
1/2 cup pumpkin seeds - I used roasted and salted ones
2 Tablespoons flax seed
1/2 cup mayo
2 Tablespoons raspberry vinegar, pear vinegar, or balsamic vinegar
2 Tablespoons sugar
1/2 cup pecans, chopped

A Song of Praise

The past several weeks have seen much sickness in our area . . . including our own home, unfortunately. It has been difficult at times to not get discouraged. But I do believe I am beginning to see the light at the end of the tunnel!

We were practicing some music tonight for a praise set we are scheduled to do this Sunday. It was uplifting, so I thought I would share . . .
