A Blessed Bundle of Broccoli

At the beginning of the week, a neighbor called to offer us some free broccoli. I cannot remember the circumstances of why he had such an abundance, but what a blessing it has been. We have had broccoli almost every night this week . . .

Monday - Steamed Broccoli with butter and garlic.

Tuesday - Chicken with Pasta & Broccoli in a Cheesy Cream Sauce.

Wednesday - Fresh Broccoli Salad with Craisins, Pumpkin Seeds, & Flax Seeds -- YUM!!

Thursday - Broccoli Quiche with Turkey Bacon & Cheese.

Tonight we had to repeat the Fresh Broccoli Salad.

We have ALL been enjoying the blessing!!! Thank you Lord! And neighbors!


FRESH BROCCOLI SALAD

6 cups fresh chopped broccoli
1/4 cup red onion, chopped
3/4 cup craisins
1/2 cup pumpkin seeds - I used roasted and salted ones
2 Tablespoons flax seed
1/2 cup mayo
2 Tablespoons raspberry vinegar, pear vinegar, or balsamic vinegar
2 Tablespoons sugar
1/2 cup pecans, chopped
